31 May ROC – AMSTERDAM
We picked the brains of young chefs at the ROC of Amsterdam, the leading culinary school in The Netherlands to see what they thought of South Georgia Toothfish. The first day started with a presentation by Georgia Seafoods explaining the provenance of the fish and its habitat to give the young chefs some inspiration for their dishes. Students were excited about such a large fish from Antarctica, which is very different in size and structure from the smaller fish available from Northern European fisheries. The students then went away to dream up their applications. On Day Two the competition began with the chefs busily preparing their dishes. There was a wonderful array of interpretations using some traditional Dutch kitchen ingredients. Students quickly witnessed the versatility of Toothfish and its ability to absorb powerful flavors while still keeping the seafish taste. It was a wonderful day and a great way to introduce the big fish from South Georgia to The Netherlands.
